How To Use A Pasta Machine

Description of pasta machine

The above Pasta Machine model comes with double cutters. It can be used for making lasagne and other pasta dishes. The dual cutter can be adjusted to make pasta up to six thicknesses. There is included a detachable handle, and screw clamp fitting.

How to prepare the pasta machine for use

Using the pasta machine is very simple once you have had a bit of practice.

Fix the machine onto a table with the clamp provided and insert the handle on the right-hand side (Photo 1).

How to prepare the mixture

Ingredients for 6 people:

4 large eggs
500 grams plain flour

1. Pour the flour into a bowl, make a hole in the centre and drop the eggs into it (Photo 2).

2. Mix the eggs with a fork until they are completely blended with the flour (Photo 3). If the mixture is too dry add some water, if it is too wet add some flour.

4. Remove mixture from the bowl, place it on a slightly floured table and knead it with the palms of your hands until it is completely homogeneous (Photo 4). A good mixture must never stick to your fingers.

5. Place the mixture on a cloth and cut it into several small pieces (Photo 5).

How to prepare the pasta

6. Set the pasta machine regulator on position 1, pulling it outwards and turning it so that the two smooth rollers are completely open (Photo 6).

7. Pass a piece of mixture through the rollers by turning the handle (Photo 7).

8. Repeat this operation 6-8 times, folding over the dough and pouring some flour in the middle if necessary (Photos 8-9).

9. Now set the regulator at the next number (2) and pass the dough through the rollers without folding it over.

10. Continue decreasing the space between the rollers by adjusting the regulator each time, until the desired thickness of dough is obtained.

11. Using a knife, cut the dough into the desired length and lay it on a cloth so that it does not dry.

12. Insert the handle in the hole for the cutting rollers, turn it slowly and pass the dough through so as to obtain the type of pasta you prefer (Photo 10).

13. If the dough is too soft the pasta machine may have some difficulty in cutting it. In this case you should lightly flour the dough. Be careful not to let it get too dry, or it would not go in between the rollers.

How to clean the pasta machine

14. After making the pasta, clean the machine with a brush or a dry cloth.

15. Do not insert knives or sharp points between the rollers.

16. Never wash the pasta machine with water or in a dishwasher.

17. If necessary, apply a few drops of vaseline oil at the ends of the cutting rollers (Photo 11).
