Porcini Are A Wonderful Addition To
Sauce
If you are looking for the perfect mushroom to add to your sauce, then look no further than the
porcini mushrooms from Italy. These fungi are the perfect addition to a fine dish, and they will aid in the
brilliance of what you are preparing and leave your guests raving.
This is not a mushroom that you can find in the Untied States on a regular basis, so many people
have to exchange this ingredient with Chanterelle mushrooms. While these mushrooms are wonderful in their own
right, they just do not compare to the wonderful aroma and taste of the Porcini mushrooms found in the woods of
Italy.
A Mushroom Of Various Sizes For Various Dishes
What is truly wonderful about the Porcini mushrooms is that
they come in various sizes. You can find these mushroom that weigh in at one ounce, all the way up to one pound
bohemoths. This is great because it allows you to pick and choose mushrooms for different dishes that require more
or less of this fantastic root.
Due to the strong flavour that is permeated from these Porcini mushroom while cooking, it really
does not even take much when you are looking to add to a special dish.
The larger mushrooms are more for an actual course rather than an ingredient, as these mushrooms
are of similar texture and consistancy as Portebella mushrroms. Both mushrooms have a very similar meaty taste to
them, and this if done right is hard to beat.
Porcini Now Or Later
Many people look to buy or pick many of these wonderful mushooms for the bulk of their cooking.
Due to the seasonal picking that is required for these mushrooms, many Italians pick large quantities and and
either freeze them or they dry them out so they can be stored for later use.
When these Porcini mushrooms are dried, they can in fact be kept for several months without
refridgeration. This makes these mushrooms very simple to store, and very easy to work with. When you want to cook
the mushrooms that have been dried, all you have to do is soak them in hot water for 20 minutes prior to cooking
them with your dish.
This will bring the mushroom back to its potent falavorful form, and it will expand back to its
original shape. The porcini is the type of mushroom that you put in your dish immediately while cooking, so the
flavors will seap throughout the whole cooking process.
A Deadly Relative
When you live in Italy and you want to go Porcini hunting in the woods, you would be best served
to wait until just after a thunderstorm in the fall. While it is a great day when you get to go hunting for porcini
mushrooms, you may want to check with local authorities. Sometimes they require you to have a licence to pick these
mushrooms, as there is a grave danger lurking within the woods.
This danger is actually a cousin of the delightful porcini however, this cousin is anything but
pleasant or delightful.The Amanita Muscaria is a very dangerous mushroom to pick as it harbors a deadly Nerotoxin,
and can be confused with the Porcini by the untrained picker.
