The Dolce version is definitely much sweeter, and is more often used for desserts and after a large meal with wine. Gorgonzola offers two very different flavors, one great cheese. This allows you to choose which type of flavor you are looking for, yet know that you are getting the very best in cheese.

The Final Choice

While there are countless fine Italian cheeses, few close out a meal quite like Scamorza. This cheese that is made with unpasteurized cow's milk, is hung to cure or dry for a long period of time not unlike the aging of Parmesan cheese.

This very white cheese however, is not nearly as shape or harsh as the Parmesan and you will find it on the table for the closing course of the meal. This cheese works best with fruits, and this is a very sweet way to end a fine dining experience.
