Spaghetti Napolitana

Spaghetti Napolitana a taste of Italy

Spaghetti Napolitana is another great Italian traditional pasta dish. The tomato sauce for spaghetti Napolitana is not reduced as much as that in the "spaghetti al sugo" recipe, and is rougher in texture. Try this spaghetti Napolitana recipe dish for your next meal.

Serves: 2

Ingredients for Spaghetti:

spaghetti (enough for 2 people)
1 tablespoon salt

Method:

1. Fill two-thirds of a large saucepan with cold water.

2. Add the salt.

3. Bring to the boil.

4. Lower the spaghetti into a large saucepan of the boiling salted water.

5. Stir once or twice with a wooden spoon.

6. Cook for about 10 minutes or according to the manufacturer's packet instructions. Spaghetti should be cooked to "al dente" not soft or overcooked in texture.

7. Quickly drain in a colander.

8. The spaghetti is then ready to have the tomato sauce added.

Ingredients for Napolitana sauce:

1 oz butter or 2 tablespoons olive oil
1 large onion (finely chopped)
1 tablespoon flour
1 wineglass of stock
1 lb ripe tomatoes (skinned, de-seeded and sliced)
2 cloves garlic (crushed)
1 teaspoon tomato puree
1 bayleaf
sugar (pinch)
salt (to taste)
pepper (ground from mill)

Method:

1. Melt butter or olive oil in a shallow saucepan.

2. Add onion.

3. Fry gently for 3-4 minutes.

4. Stir in flour.

5. Add stock, tomatoes, garlic, puree, bayleaf, sugar, salt and pepper.

6. Slowly bring to the boil.

7. Stir occasionally.

8. Simmer for 25-30 minutes or until well reduced to a thick pulp.

9. Remove bayleaf.

10. The sauce is then ready to serve.

11. Spoon the spaghetti onto a plate or dish.

12. Spoon the Napolitana sauce over the top.

Tip:

1. Spaghetti Napolitana is best served "al dente" and piping hot.

2. Serve the Napolitana sauce mixed with, or over, pasta, or if preferred the pasta and sauce can all be turned into a gratin dish and browned in the oven.

3. You can serve either spaghetti, tagliatelle or macaroni pasta with this Napolitana sauce.
