Mozzarella and Tomato Salad

Mozzarella and tomato salad is a great dish on its own, as an accompaniment to other dishes or
even as a starter. Mozzarella and tomato salad is like summer on a plate. Mozzarella and tomato salad just sums up summer to me. If you close your eyes
whilst eating it, you can visualise the Italian countryside and the hazy heat of summer. Enjoy it with some freshly
baked bread and a glass of wine. Then let it transport you to your favourite Italian hideaway. It is fresh tasting
and simple to make, so give it a try!
Serves: 2-4
Ingredients:
1 lb beef steak tomatoes (cut into wedges or slices as preferred)
8 oz mozzarella cheese (sliced)
2 tablespoons pumpkin seeds
2 tablespoons sunflower seeds
Dressing:
1 tablespoon fresh chives (chopped)
3 tablespoons olive oil
2 tablespoons white wine vinegar
1 teaspoon whole grain mustard
6 tablespoons olive oil (virgin)
salt and freshly ground black pepper (to taste)
To Garnish:
1. Fresh chives (chopped)
2. 8 basil leaves
Method:
1. Place tomatoes, mozzarella, pumpkin seeds and sunflower seeds in a bowl.
2. Place the dressing ingredients in a screw-top jar and shake until blended.
3. Pour blended dressing over the salad and toss.
4. Garnish the Mozzarella and tomato salad with the fresh chopped chives.
5. Decorate with the basil leaves.
6. Serve with fresh bread.
