Serves: 4

Cooking Time: 30 minutes

Ingredients:

16 zucchini flowers
2 eggs (large)
1 cup water (cold)
1 cup flour (plain)
salt and pepper (to taste)
oil (for deep frying)

Method:

1. Cut off the stems (leave about 1 inch) from the zucchini flowers.

2. Gently open the zuchini flowers.

3. Remove the stamen.

4. Heat the oil to degrees 375F.

5. Pour the flour into a mixing bowl.

6. Add the water.

7. Add the eggs.

8. Mix them all together well.

9. Whisk the mixture until completely blended.

10. Dip the flower into the batter coating.

11. Coat the flower completely.

12. Let any excess batter drip off.

13. Check to ensure that the oil is at the correct temperature.

14. Drop the flower into the oil.

15. Cook about 1 minute each side until golden brown.

16. Line a plate with a paper towel.

17. Place the fried zucchini flower onto the paper towel lined plate.

18. Continue to cook the rest of the flowers in the same way.

19. Serve the Fried Zucchini Flowers immediately.
