Bruschetta

Easy to make and very tasty

Bruschetta is very simple to make and yet is really quite delicious. It is perfect for serving as a starter or with drinks before a meal. All it is, is toasted Italian bread, combined with olive oil, garlic, tomatoes and basil. Very simple but heavenly! Go on, try bruschetta for yourself and see just how easy it is to prepare.

Serves: 4-6

Ingredients:

6 plum tomatoes (ripe)
basil leaves (roughly torn)
2 garlic cloves
6 tablespoons olive oil (virgin)
salt and pepper (to taste)
Italian bread (12 slices)

Method:

1. Prepare the tomatoes by placing them in a bowl and pouring boiling water over them. Leave for only one minute.

2. Drain the tomatoes, remove and dispense with the skins.

3. Finely chop the tomatoes.

4. Place the bread slices under a grill and toast on both sides.

5. Rub the garlic cloves over each slice of bread.

6. Drizzle the olive oil over each slice of bread.

7. Add the tomatoes and top off with the basil leaves.

8. Add salt and pepper to taste.

9. Serve immediately.
