Frittata Con Zucchini

Frittata con zucchini is a simple but very
tasty dish
Frittata Con Zucchini is an Italian traditional food dish recipe. Frittata con Zucchini is an Italian meal of omelette with marrow. Frittata con zucchini is easy to make so give it a try.
Serves: 4
Ingredients:
4 tbsp olive oil (extra virgin)
1 large onion (finely diced)
2 zucchini (finely sliced)
8 eggs
salt and pepper (to taste)
Method:
1. Pour 2 tablespoons of the olive oil into an omelette pan or frying
pan.
2. Put the omelette pan over a medium heat.
3. Add the onion.
4. Add the zucchini.
5. Add a generous pinch of salt.
6. Cook until the zucchini are almost soft.
7. The onion will be cooked when it becomes see-through.
8. Put the eggs into a large mixing bowl.
9. Beat the eggs until they are fully blended.
10. Add salt and pepper to taste.
11. Pour the beaten eggs into the omelette pan when the vegetables are
cooked.
12. When the egg starts to thicken, break up the centre (using a fork) to
let all the egg penetrate to the bottom.
13. Shake lightly the pan back and forth to loosen the frittata.
14. Use a fork to loosen it from the edges of the pan.
15. Lift the frittata to check that the bottom is cooked and
golden.
16. Place a large plate onto the top of the omelette pan.
17. Invert the pan and plate.
18. The bottom (cooked) face of the frittata would have now become the top
face.
19. Add 2 tablespoons of olive oil to the
omelette pan.
20. Slide the frittata back into the pan so that the uncooked face is now in
the pan.
21. Cook this side of the frittata until it is golden.
22. Lift the frittata to check that the bottom is golden brown.
23. Slide the frittata onto a serving dish.
24. Serve warm.
Tip:
1. Make sure that the zucchini are not overcooked as they have to be firm.
2. Do not let the onions burns as this will allow the frittata to take on a bitter taste.
