Fried Marrow

Fried marrow is a simple but tasty meal or snack

Fried marrow is an Italian traditional food rustic, delicious and quick snack or meal recipe dish.

This dish should be made with a large organically grown marrow in order to achieve the best flavour. Some people like to add beaten eggs to the fried marrow but I prefer it without. I find that the flavour is so good on its own that it needs nothing added. Fried marrow will taste best when cooked on top of a solid fuel stove.

If you enjoy fried marrow, also try: Zucchini fritti, Fried zucchinin flowers, Frittata con zucchini, and Zaleti. Fried marrow has always been a firm family favourite.

Serves: 4

Cooking Time: 30 minutes

Ingredients:

3 lb (1.5Kg) organic marrow
2 oz butter
1 teaspoon salt
2 large eggs (beaten) - optional
salt and pepper (to taste)

Method:

1. Prepare the marrow by washing and drying it.

2. Trim off the top and tail of the marrow.

3. Cut the marrow into quarters.

5. Remove the marrow seeds using a spoon but leave the skin on.

6. Cut the marrow quarters into rough cubes or slices.

7. Heat a large heavy-based frying pan over a low heat.

8. Add the butter.

9. When the butter is hot add the marrow pieces.

10. Stir with a wooden spoon to ensure that they are all coated in the butter.

11. Add salt.

12. Add pepper.

13. Increase heat to medium setting.

14. Partially cover pan with lid and cook for 5 minutes.

Cover zucchini

15. Remove cover and continue to cook over a medium to low heat.

Zucchini after 16 minutes

16. They should look like this after about 16 minutes.

17. Stir frequently so that the marrow does not stick to the pan.

18. Keep cooking until the marrow has taken on a golden-brown colour and turned into a pulp consistency.

19. Stir the content of the pan frequently so that it does not stick.

20. After 25 minutes cooking, they should look like this:

21.Those of you who wish to add the beaten eggs, can do so now.

22. Continue cooking until the beaten eggs have been cooked.

23. Season to taste.

24. Spoon fried marrow onto a hot plate.

25. Finished fried marrow on a plate.

26. Serve the fried marrow with a piece of crusty bread.
