Serves: 4

Ingredients:

1/4 cup olive oil (extra-virgin)
3 porcini mushrooms (fresh, chopped)
1 tbsp salt
5 cloves garlic (chopped)
1 lb egg fettuccine noodles
1/2 tsp black pepper (freshly ground)
1/4 cup Pecorino cheese (grated)
zest of one lemon

Method:

1. Fill a large saucepan with cold water upto two-thirds full (2/3rds).

2. Add the salt.

3. Bring the water to a boil.

4. Meanwhile, heat 2 tablespoons of the olive oil in a large frying pan (skillet) over high heat.

5. Add the mushrooms.

6. Add a pinch of salt.

7. Saute the mushrooms until they release their liquid and begin to brown.

8. Stir in the garlic.

9. Cook for another minute.

10. Remove from heat.

11. Set the frying pan (skillet) aside.

12. When the water is at boiling point, add the fettuccine.

13. Cook the fettuccine noodles according to the manufacturer's instructions.

14. Drain the fettuccine.

15. Transfer the noodles to the frying pan with mushrooms.

16. Stir in the black pepper.

17. Stir in the cheese.

18. Stir in the lemon zest.

19. Stir in the remaining 2 tablespoons of olive oil.

20. Place onto a serving plate.

21. Serve the Fettuccine ai Funghi Porcini hot.
