Serves: 4
Ingredients:
2 yellow bell peppers (large)
3 tomatoes (peeled, cubed)
1 tbsp capers
1/3 cup basil (freshly chopped)
1/2 tsp fennel seeds
1/2 cup smoked Pecorino cheese (diced)
1/2 cup olive oil (extra virgin)
salt
freshly ground pepper
1/2 lb fettuccine pasta
Method:
1. Turn on the grill to a medium heatl.
2. Put an aluminium foil over the grill pan.
3. Place the yellow peppers on the foil.
4. Grill the peppers.
5. Turn occasionally, until the skin has blackened all over.
6. Place the peppers in a brown paper bag.
7. Close the bag securely and let the peppers rest for 5 minutes.
8. Remove the peppers.
9. Allow to cool.
10. Remove the stem ends, seeds, and any white membrane.
11. Cut the peppers into thin strips.
12. Put the strips of peppers into a large bowl.
13. Add the tomatoes.
14. Add the capers.
15. Add the basil.
16. Add the fennel.
17. Add the Pecorino cheese.
18. Add the olive oil.
19. Season with salt and pepper.
20. Toss the ingredients well.
21. Set aside.
22. Bring a large sauce of water to the boil.
23. Add the salt.
24. Put the fettuccine into the water.
25. Cook until 'al dente', stirring often.
26. Drain the pasta.
27. Add the pasta to the sauce in the bowl and toss.
28. Season to taste.
29. Serve hot.
