Veal scaloppine with marsala wine is simply delicious. It is a very traditional
Italian dish. Veal scaloppine with marsala is a popular dish with a wine and mushroom sauce. The
dish is named after the particular wine, Marsala used to create the sauce. Marsala is produced in Sicily, Italy,
and is one of the country’s most famous wines. Try Veal scaloppine with marsala

Serves: 4
Ingredients: 1 1/2 lbs veal scaloppine
flour, spread on a plate
1/4 cup olive oil
1/2 pound of mushrooms
1/2 cup Marsala wine
2 tablespoons of butter
1/2 cup chicken stock
Salt and Pepper (to taste)
Method:
1. Heat olive oil in large saute pan over medium-high heat.
2. When the oil is hot, dredge both sides of the veal in flour, shake off excess flour and place
in the pan.
3. Saute veal, turning once, until lightly browned on both sides. Transfer the veal to a warm
plate.
4. Drain all but a little bit of the oil and add mushrooms. Saute the mushrooms until they begin
to lightly brown.
5. Add the Marsala wine, and scrape loose with a wooden spoon all browning residue on the bottom
and sides of the pan.
6. Add butter, chicken stock, salt and pepper.
7. Cook until the liquid is reduced by half, approximately 6 minutes.
8. Place the veal scaloppine back in the pan and cook until heated through.
9. Transfer the veal scaloppine to warm serving plates, pour sauce over them and serve
immediately.
