Chicken Marsala from Italian Traditional Food

Chicken Marsala is a traditional Italian dish. Chicken Marsala is a very
simple, but delicious old Italian recipe. Chicken Marsala is a popular chicken dish with a wine
and mushroom sauce. The dish is named after the particular wine, Marsala used to create the sauce.
Marsala is produced in Sicily, Italy, and is one of the country’s most famous wines. Its flavour
can range from sweet to dry, and it is used as a dessert wine or aperitif, as well as added to other ingredients
for a variety of dishes.

Serves: 2
Ingredients:
2 boneless, skinless chicken breasts, pounded thin
flour, spread on a plate
1/4 cup olive oil
1/2 pound of mushrooms
1/2 cup Marsala wine
2 tablespoons of butter
1/2 cup chicken stock
Salt and Pepper (to taste)
Method:
1. Heat olive oil in large saute pan over medium-high heat.
2. When the oil is hot, cover both sides of the chicken breasts in flour, shake off excess flour
and place in the pan.
3. Saute chicken, turning once, until lightly browned on both sides. Transfer the chicken to a
warm plate.
4. Drain all but a little bit of the oil and add mushrooms. Saute the mushrooms until they begin
to lightly brown.
5. Add the Marsala wine, and scrape loose with a wooden spoon all browning residue on the bottom
and sides of the pan.
6. Add butter, chicken stock, salt and pepper.
7. Cook until the liquid is reduced by half, approximately 6 minutes.
8. Place the chicken breasts back in the pan and cook until heated through.
9. Transfer the chicken breasts to warm serving plates, pour sauce over them and serve
immediately.
