Insalata di Finocchi e Arance (Fennel and Orange Salad) is a fresh tasting Italian salad. Serves: 6

Ingredients:

3 oranges (peeled)
2 fennels
salt and pepper
4 tablespoons virgin olive oil
3 oz (100 grams) Sicilian olives (pitted and sliced)
1 small onion (finely sliced)

Method:

1. Slice the oranges across (or you can use the individual orange segments) and arrange them on a serving plate.

2. Clean the fennels, removing the base, the outer leaves, and the green stems.

3. Slice the fennel very thinly.

4. Transfer the fennel to a bowl.

5. Dress the fennel with virgin olive oil, salt, and pepper.

6. Transfer the fennel to the serving dish.

7. Add sliced olives.

8. Add the olive oil.

9. Add the onion.

10. Drizzle with more virgin olive oil.

11. Serve.
