Serves: 4

Ingredients:

1 lb (450 grams) very tender small green beans
1 lb (450 grams) small red potatoes (boiled)
salt
5 tablespoons virgin olive oil
2 tablespoons white wine vinegar

Method:

1. Clean the green beans removing the two ends (top and tail).

2. Boil the green beans in lightly salted water, until tender but still firm.

3. Let the beans cool to room temperature.

4. Transfer to a bowl.

5. Cut the potatoes in large dice.

6. Add the potatoes to the bowl.

7. Add salt to taste.

8. Add olive oil.

9. Add white wine vinegar.

10. Mix thoroughly.

11. Serve the Insalata di Fagiolini e Patate immediately.
