Gelato al Pistacchio (Pistachio ice ream) is another all favourite classic Italian dessert. This very popular Italian gelato (ice cream) can be found in every gelateria throughout Italy.

(Here is a good holiday tip. If possible, try to find a family run gelateria as the ice cream will be homemade and better than others.)

Homemade pistachio ice cream has a darker green colour and a great natural pistachio flavour compared to the manufactured ones. Gelato al pistacchio can now be made at home using an electric ice cream maker.

The ice cream maker will mix together the ingredients whilst freezing them to produce delightful homemade ice cream.

Serves: 4

Ingredients:

1 cup (180 grams) shelled raw pistachios
3 cups whole milk
3/4 cup (150 grams) sugar
Ice cream maker

Method:

1. Save 2 tablespoons of the pistachios for decoration.

2. Grind the pistachios in a food processor until they are reduced to a very fine powder.

3. Pour milk into a large saucepan over medium heat.

4. Add the sugar.

5. Stir well to disolve the sugar.

6. When the sugar has dissolved and the milk starts to bubble, turn heat off.

7. Add the pistachios, and mix well.

8. Set aside to cool to room temperature.

9. Then place in the refrigerator for several hours to cool the mixture totally.

10. When the pistachio mixture is cold transfer it to an ice cream maker.

11. Now follow the instructions that came with the ice cream maker.

12. Transfer the pistachio ice cream to a plastic container and place in the freezer.

13. Chop the reserved pistachios and sprinkle over the pistachio ice cream when serving.
