Omelet

A plain omelet is simple to
make
An omelet is one of the most useful egg dishes to make. It is also simple and quick to cook. An
omelet can be made plain or stuffed with savoury fillings of cheese, mushroom, potato or herbs just to give you a
few examples. The secret of making a good omelet lies in using really fresh eggs and a good omelet pan.
Serves: 2
Cooking Time: 2 minutes
Ingredients for omelet:
4 eggs
1 1/2 tablespoons cold water
salt
black pepper (ground from mill)
1 oz butter
omelet pan
Method:
1. Break eggs into a basin and beat well with a fork.

2. When well mixed, add water and seasoning (this should be done just before making it).
3. Heat pan on medium heat.
4. Put in butter in two pieces and, when frothing, pour in egg mixture at once.

5. Leave for 10-15 seconds before stirring round slowly with the flat of a fork.
6. Do this once or twice round pan, stop and leave for another 5-6 seconds.
7. Lift up edge of omelet to let any remaining raw egg run on to hot pan.
8. Start to turn omelet over.

9. Now tilt pan away from you and fold over omelet to far side.

10. Change your grip on pan so that the handle runs up the palm of your hand.
11. Take the hot dish or plate in your other hand, tilt it slightly and tip omelet on to it.

12. Serve at once.
