Seafood is as diverse as the chefs that cook it, and when you are thinking fish for dinner you know you have plenty of options. From the tiny and strong Anchovies, all the way down to the thin lengthy needle fish great meals are produced with the love of seafood in mind.

Anchovies are used for many dishes, some are actual pasta or meat dishes while others are more like salads. This pungent strong tasting little fish is great in many dishes, but it must be noted that it can be an acquired taste.

Taking a needle fish out for a grilling experience is an absolute delight, and actually nothing like its cousin the Anchovy. There are some very special dishes that revolve around the needle fish, and none of which require you to prepare your mind or senses to eat.

How To Pick The Perfect Fresh Fish

If you are thinking seafood for dinner, you are going to want it to be as fresh as you can possibly get. When you want to find a fresh fish, there are a few things to look for, and if this fish is not up to snuff it is time to move on. You will want to press on a fish’s side, and the skin should be elastic like and spring back at you. This will be a good indicator of freshness.

You should always look for the “Stare” when you are trying to pick the right fish, and if the fish does not stare and the eyes are cloudy this fish is anything but fresh. A fresh fish has eyes that look alert and concerned, the fish should ideally look like it is still alive and that it could bolt at any given moment.

The final test of freshness when selecting a fish for dinner involves looking in the gills. The gills of a fresh fish should be bright red, if the fish has gills that are on the pink side then this fish should be avoided.
