look for, and if this fish is not up to snuff it is time to move on. You will want to press on a fish’s side, and
the skin should be elastic like and spring back at you. This will be a good indicator of freshness.
You should always look for the “Stare” when you are trying to pick the right fish, and if the
fish does not stare and the eyes are cloudy this fish is anything but fresh. A fresh fish has eyes that look alert
and concerned, the fish should ideally look like it is still alive and that it could bolt at any given moment.
The final test of freshness when selecting a fish for dinner involves looking in the gills. The
gills of a fresh fish should be bright red, if the fish has gills that are on the pink side then this fish should
be avoided.
