All you need to accomplish a meat dish like this is a roasting pan, a larger cut of meat which can include a whole bird, a whole fish, or a larger cut of beef, and Kosher salt.

You are going to need a fair amount of this salt, so it is best to buy it in or around 5 pound bags. This delightful way to cook the meats that you love, is easy and actually a great way to bring the most flavor out of what you are cooking.

Salt roasting meats the Italian way has been done for generations, and it was one of the most sensible ways to cook meat as it kept the ingredient level down. The appreciation for this manner of cooking has passed from family to family, and is still a cooking method that is used to this day.

The salting roast method allows the meat to stay tender because the salt draws the moisture and fats away from the meat, but also keeps the meat away from the dry heat of the oven or hearth.

When the meat is ready, it is a simple matter of cracking the salt shell that has formed over the meat. You will want to be sure that the roasting pan that is to be used for the meat is large enough to accommodate the dish.

When you want try salt roasting the Italian way, you will need to get your roasting pan ready with at least a 1 inch thick layer of salt.

From this point you will want to lay the meat be it steak, a full poultry, or a whole fish on the salt. You then cover the meat with another layer of salt, usually deep enough to completely cover the meat itself.

You will preheat the oven to anywhere from 400 to 440 degrees and the meat will sit from 40 to 75 minutes depending on the dish. If you are cooking a whole fish it will be the minimum of 40 minutes.

If you are going to cook a whole bird then this will be accomplished with a 90-minute cook time. From the time that it is finished you merely need to break the salt crust that has formed and serve with the salt crust as a decoration on the side.
