Cotechino With Lentils

Cotechino with lentils is a large boiled Italian pork sausage with lentils.
Cotechino with lentils is traditionally served on New Year's Eve. Cotechino can be

Serves: 4
Ingredients:
1 cotechino
600g of lentils
2 carrots (chopped)
2 celery sticks (chopped)
1 large onion (chopped)
2 stock cubes (chicken)
50g of tomato puree
3 tbsp olive oil (extra virgin)
1 tsp salt
Method:
1. Soak the lentils in a bowl with water 24 hours before using.
2. Heat up the olive oil in a pan.
3. Add the carrots.
4. Add the celery.
5. Add the onion.
6. Stir them.
7. Cook in the pan for 5 minutes until browned.
8. Add the tomato puree.
9. Add the stock cubes.
10. Drain the lentils.
11. Add the lentils.
12. Add salt.
13. Cover with cold water.
14. Cook for about 40 minutes.
15. Wrap the cotechino in foil.
16. Put the cotechino in a pan.
17. Cover the cotechino with water.
18. Cook for 40 minutes.
19. Remove the cotechino from the foil.
20. Cut it in to slices.
21. Spoon the lentils onto a serving plate.
22. Place the cotechino slices on top.
23. Serve hot.
