Tagliatelle al prosciutto

Tagliatelle al prosciutto is a welcomed
meal
Tagliatelle al prosciutto (cured Italian ham) is a tasty traditional Italian
dish. Tagliatelle is the ribbon pasta, also called noodles. It can be bought in varying widths though the most
usual is about 1/4 inch wide. Tagliatelle is also sold flavoured and coloured with spinach or tomato. Tagliatelle
can also be served with bolognese, milanese or napolitana sauces. For a delicious tagliatelle al prosciutto meal just follow this simple recipe.
Serves: 4
Ingredients for Tagliatelle:
1 lb tagliatelle (enough for 4 people)
1 tablespoon salt
Method:
1. Lower the tagliatelle into a large pan of boiling salted
water.
2. Stir once or twice with a wooden spoon.
3. Cook for about 10 minutes or according to the manufacturer's packet
instructions. Tagliatelle should be cooked to "al dente" not soft or pulpy in texture.
4. Drain in a colander, and rinse with some hot water.
5. To keep the tagliatelle warm, pour hot water into the pan just enough to cover the bottom
before putting them back; cover pan and leave in a warm place.
Ingredients:
3 oz butter
4 sticks of celery (chopped)
1 carrot (chopped)
2 cloves garlic (chopped)
1 tablespoon tomato puree
1/4 pint of stock (chicken or veal)
salt and pepper
4 tablespoons of Parmesan cheese (grated)
8 oz prosciutto (cut into small pieces)
Method:
1. Melt two-thirds of the butter in a shallow pan.
2. Add the vegetables and garlic.
3. Cover and cook for about 5 minutes.
4. Stir in the tomato puree and stock.
5. Season and continue to cook, uncovered, a further 5 minutes until syrupy.
6. Add the pieces of prosciutto.
7. Drain the tagliatelle and add the remaining butter.
8. Season and shake up the tagliatelle over the heat until thoroughly hot.
9. Add the cheese to the tagliatelle and turn on to a serving dish.
10. Spoon the prosciutto mixture over the tagliatelle pasta.
