Stuffed Onion Skins from Italian Traditional Food

Stuffed onion skins are simply
divine
Stuffed onion skins are a great way of providing a delicious and wholesome winter
meal. Stuffed onion skins are made with a savoury filling of breadcrumbs, Parmesan cheese, ricotta
cheese and eggs, all covered with a tomato pasta sauce. The quantities below will
make enough stuffed onion skins to feed four hungry people.
Serves: 4
Cooking Time: 45 minutes
Oven Setting: Preheat to 190C or Gas Mark 5
Ingredients:
3 large onions
water
salt (spoonful)
1 pint of pasta sauce (diluted with a little water)
Method:
1. Remove the onion peel and cut onions in half.
2. Place the onions in a pan and pour over boiled water , simmer until they become soft and
pliable. Remove from the water and allow to cool.
Ingredients for filling:
250 grams ricotta
50 grams breadcrumbs
150 grams Parmesan cheese (freshly grated)
4 large eggs
2 teaspoons salt
pepper (to taste)
Method:
1. Mix all the ingredients together until it forms a firm consistency. It should be moist to the
touch without being wet.
2. Using a spoon, scoop up enough of the filling to fill up an onion skin.
3. Lay the stuffed onion skin (filling side up) into an ovenproof dish.
4. Cover the stuffed onion skins with the diluted pasta sauce. Put in enough pasta sauce to barely
cover the stuffed onion skins.
5. Cover them with foil so that they do not burn during the cooking process.
6. Cook in a gas oven at Mark 5 or electric oven at 190C degrees for 45 minutes or until
tender.
7. Halfway through the cooking process, add more pasta sauce if necessary.
Tip:
1. Stuffed onion skins can be eaten on their own but are especially tasty when
eaten either with fresh Italian bread or mash potato.
